Vegetarian Mexican Lasagna Make it Monday

I can’t even tell you how delicious this recipe is. I have had it pulled from a magazine since last year and finally made it Sunday. Of course I never stick to a recipe so I added the Cumin, green chiles and corn but feel free to keep those out, or add your own additions. You could also use whole wheat tortillas but corn ones are pretty good for you.

Ingredients:
1 package corn tortillas
2 medium onions
4 cloves garlic
3 tablespoons olive oil
2 1/2 tsp ground cumin
small can of corn
1 large can tomato sauce
1 can tomatoes (i used the ones with green chiles for an extra UMPH)
2 teaspoons oregano
1/4 cup chopped parsley
1 can mild enchilada sauce
1 can Mexe-beans (make sure they don’t contain lard)
3/4 pound Mozzarella cheese, shredded or thinly sliced
2 cups ricotta cheese
1/2 cup grated parmesan cheese

Directions:

Saute onions and garlic in olive oil till soft and transparent.

Stir in everything but cheeses and tortillas.

Place a layer of tortillas in a baking dish.

Place 1/3 sauce over them and spread layer of ricotta, layer of mozzarella, 1/3 parmesan Repeat twice.

Bake at 350 (for 20 – 30 minutes).

I think it only took me about 20 minutes to prepare.  I have oregano and parsley ready, chopped and and frozen so I only had to cut garlic and onions.  And we almost always buy blocks of cheese and grate it at home.  So much fresher and less preservatives this way.

Have an Eco-Friendly Christmas!

Christmas is a ’spendy”, no holds barred, extravagant time of year. I can’t speak for Kwanzaa or Hanukkah as I have never been christmas-tree-with-presentsaround a family celebrating those, but I am sure they are too!

So here are a few ideas to help you keep your year long green missions in check, and not ruin all of the eco-friendly efforts we all do.

  • Use LED lights. find these at any home shopping store. HomeDepot, Lowes etc.  You will not only save eco-face but save money on your energy bill too!  Send old strands of  old school incandescent lights to HolidayLeds.com they will take care of recycling!
  • Make your own decor.  Use pinecones, acorns, sprigs from trees, holly.  Anything that is pretty, festive and not destined to be around for the next thousands of years (plastic).  String Popcorn and Berries for your tree.  It is a great family project.  My mom and I always did this while my dad and brother went out for the tree.  (my favorite memories)
  • Reusable Bags for gifting and shopping. Make your gift a two-fer! Give them a reusable Christmas bag. I got 3 nice, Christmas ones at TJ Maxx yesterday for only $2.99. And make sure you take your own to the stores too.  or use Ecoration bags!
  • Buy and use a real tree! Fake trees are no good.  not at all.  Petroleum based and in no way recyclable or compostable.  Either get a tree with roots and plant it (this is what we did growing  up) or take it to be made into wood chips and use those around the yard.
  • Buy Eco-friendly gifts.  Replace  your lotion and candle sets with some of the organic and/or natural ones you have read about on Prissy Green.  Buy Soy or Beeswax candles.  Find at Dancing Dingo and my store, Prissy Green!
  • Skip paper cards. Unless you use a family picture for your cards, consider a phone call or an E-card instead.  Try and keep the over 2 billion Christmas cards out of the trash and recycling bins!
  • Holiday Dinner?  Think of hitting up your local farmers market for a free range turkey.  Fresh vegetables and anything else they might have.  Cheese, milk etc.  Dinner will taste better, be better for you, and you will be doing your part so you will feel better!
  • Kill the  paper plates and plastic forks. If you just have to have some of those items, try shopping at LetsGoGreen.biz so you are getting the most eco-friendly and compostable varieties.  Use code KRG20 to save 20%.

Chango Make a Little Money Off Your Searches

I am trying not to add too many ads or links on Prissy Green, but frankly someone has to pay the bills right?  And personally Kontera seems to be pretty slow.geico_eyeball_money2

Kontera ads are ads word links(two lines that under them) that is you hover on them a pop up comes up.  And if you click on it you make me a few pennies. But they show to all of your readers.

Chango is ad links for search engine traffic. (try searching “Korres Blockbuster” then you will see Prissy Green at the top in Google, then look at that post.  You will see the two lines under some words and some will be Kontera links and some will be Chango. I appreciate Chango for realizing I am not trying to spam my loyal readers.  And of course I am not trying to spam my search readers (hopefully loyal readers soon) but again, someone has to pay the bills!

I have read a couple articles and Chango seems to be the new big deal and makes a better profit (if you have search engine visability)

If you don’t have much search engine visability, Kontera is probably still a safe bet, but if you do get search engine traffic you might want to try it out!

Chango is similar to Chitika (which is fantastic). Chitika ads are boxes below or after your posts that only display to search engine traffic.

My Destination Dinner is for sure in my top 5 of unique reviews and items I would purchase again.  We had a blast and we didn’t even drink any of the recommended Red Stripe!

Let me explain just what Destination Dinners is, and what they do:

We actually grill out a lot so this was perfect. And it included woodchips for just the right smoky flavor punch. Now Craig isn’t a big veggie fan, so no veggies were grilled. (or bought, lol) so I ahem, made a can of corn on the side for me.

2625Delicious I tell you.  Although after looking at the picture, I have a hankering for Sweet Potatoes.  That is usually the dish I make for Thanksgiving, but this year there were only 3 of us (compared to the normal 40-60) and I was the only one that would have ate them.  =)

Wai Lana Review

To me this Wai Lana workout is different then most Yoga Dvd’s in the sense that she really teaches you why and what you are doing.  It is more of a gentle hand holding then just telling you Yoga is magical, powerful and to reminding you to stand tall and breathe deep.  The Wake Up Body DVD states it is for intermediate, but I truly think anyone could do it if they go slow.  I didn’t find any moment uncomfortable.  Although I am working on holding some Asanas.  My balance is definitely not what it used to be!


Wai Lana’s gentle approach is soothing and just overall seems to be a more spiritual way of teaching Yoga then I have witnessed before.

Wai Lana also sent me something that I had surely been lacking in any true Yoga session.  A mat!  I have one that came with the Wii Fit but…. it sorta slips and slides all over our carpet.  It is really thin.  The Green EnviroMat I received from Wai Lana is durable, heavier and thicker.  More plush but with support too.  I can’t believe I didn’t realize before how much of a difference it can make.  First it makes me feel more “professional.” sorta like when I was little and used to think I could run faster when I got new sneakers?  That is how the EnviroMat makes me feel.  It encourages me in some way to bend, breath and twist deeper.  Power of the mind!
